MEDITERRANEAN
COUSCOUS SALAD
INGREDIENTS:
200g couscous
halved
250ml vegetable stock
Fresh mint
1 cucumber, diced
Juice of 1 lemon
METHOD:
Pour hot stock over the couscous and cover for 5
minutes.
Fluff with a fork.
200g cherry tomatoes,
Stir through vegetables, mint and lemon juice.
Chill before serving.
