HARISSA LAMB KOFTAS
A smoky Mediterranean favourite packed with 昀氀avour.
INGREDIENTS:
500g lean lamb mince
2 tbsp chopped parsley
2 tbsp harissa paste
Salt and black pepper
1 small onion, 昀椀nely diced
Metal or wooden skewers
METHOD:
Combine all ingredients in a large bowl.
Mix thoroughly and shape around skewers.
Chill for 30 minutes.
Cook on the barbecue for 10 to 12 minutes,
turning regularly until browned and cooked
through.
HEALTHY TIP:
Choose lean lamb
mince to reduce
saturated fat.
VEGETARIAN ALTERNATIVE :
PAIR WITH:
Use mashed chickpeas and lentils
with the same seasoning.
