Chicken with
Seasonal
Vegetables
Ingredients
• 4 chicken breasts
• 2 tbsp extra virgin olive oil
• 2 carrots, sliced
• 2 parsnips, sliced
• 1 fennel bulb, sliced
• 1 apple, sliced
• 1 tbsp fresh thyme
• Salt and pepper
Method
1. Preheat oven to 200°C (390°F).
2. Rub chicken breasts with 1 tbsp olive oil,
salt, pepper, and thyme.
3. In a roasting dish, toss vegetables and
apple with remaining olive oil, salt,
pepper, and thyme.
4. Place chicken on top of vegetables.
5. Roast for about 25-30 minutes until
chicken is cooked and vegetables are
tender.

6. Serve hot with the roasted vegetables
