Warm Kale and Pomegranate
Salad (Vegetarian)
Ingredients
• 200g kale, chopped
Method
1. Heat olive oil in a large skillet over medium heat.
• 1 tbsp extra virgin olive oil
• 1 pomegranate, seeds separated
2. Add kale, cook until wilted and tender (~5 minutes).
• 50g walnuts, chopped
• Juice of 1 lemon
3. Remove from heat, squeeze lemon over, and toss with pomegranate seeds and walnuts.
• Salt and pepper
4. Season with salt and pepper, serve warm.
