2. In a saucepan, bring water or broth to a boil. Add the
rice, stir once, reduce the heat to low, cover, and simmer
for 45–50 minutes, until tender and the liquid is
absorbed.
3. Remove from the heat and let sit, covered, for 5 minutes.
Fluff with a fork, then stir in cranberries, almonds, olive
oil, and lemon juice.
4. Season with salt and pepper to taste. Serve warm as a
side or light main.
