Almond and
Apricot Baklava

Ingredients
• 200g phyllo pastry
• 150g dried apricots, chopped
• 100g almonds, chopped
• 2 tbsp honey

• 3 tbsp extra virgin olive oil (for brushing)
• 1 tsp ground cinnamon
Method
1. Preheat oven to 180°C (355°F).
6. Cover with remaining phyllo sheets, brushing
each sheet with olive oil.
2. Brush a baking dish with olive oil.
7. Cut into squares before baking.
3. Layer half of the phyllo sheets, brushing each
sheet with olive oil.
8. Bake for 25-30 minutes until golden.
4. Mix apricots, almonds, cinnamon, and orange zest. 9. Warm honey and drizzle
over freshly baked baklava.
5. Spread 昀椀llings evenly over the layered sheets.
